Pork and Beans gets a Makeover
BBQ... America loves it. And what's our favorite side dish? Why pork and beans, of course.
Many of us eat pork and beans right out of the can, or perhaps even a gussied-up canned version. And that's probably exactly what you get, even in many restaurants. Let's face it, even though we may like them, canned pork and beans has some ingredients that are, well, not the best for our health.

We're Eating Only Grass-Fed Meats These Days...and They're Getting Easier to Find
Because I live in the Sierra Nevada mountains, my local Farmer's Market
is only open June through September. We have a vendor at our market who
raises grass-fed beef about an hour north of us. It's delicious, but
expensive. Even so, I feel it's worth it, during the months that I can
get it.
Thompson Valley Ranch, my Farmer's Market source for grass-fed beef.

Asian Chicken Soup with Shiitake and Zucchini "Noodles"
A wonderful warming treat if you're feeling a little under the weather. Or not!!
Often Asian soups have noodles, but in this soup, the noodles have been replaced with zucchini "noodles". This keeps the soup gluten-free, of course, great for anyone watching inflammation or healing eczema. But the zucchini "noodles" are also pretty, colorful and tasty. To make them, I use a

Mashed Potato Leftovers
Is your fridge brimming with leftover Thanksgiving offerings? Mine surely is. But so far, I've whittled down at least one dish--the mashed potatoes.
Potato pancakes are always a delicious treat. Once you have the mashed potatoes, the work is basically done. Just drop in a couple of eggs and fry them up. This is definitely one of the side-benefits of Thanksgiving leftovers.
I served

Talkin' Turkey, Wild, Farm Raised and more...
Wild Turkey flock outside our Gate
Who doesn't love Turkey? We have a unique situation in that our farm is next to a 11,000 acre wild life refuge. So we don't just have turkeys come by... we have herds of turkeys for neighbors.
What have we learned?
Turkeys are the ultimate herd animal. They will follow in a line to cross a stream or driveway. There can be 30 turkeys on one side..

I'm in the Mood for Soup!
With the first autumn cold weather, I find that my thoughts turn to soups and stews. This week I've been cooking cold-weather soups that are so chock full of hearty ingredients that you could almost call them stews, if it weren't for the broth.
Cod, Kale and Bacon Soup
You can serve a salad with this if you wish, but this healthy soup is really pretty much a one dish meal. For ease, why

9 Tips for a Gluten Free Thanksgiving...and Other Healthy Suggestions
Who Loves Organic Turkey?
Healing with food is not always easy around Thanksgiving time. Especially for those of us that are trying to stick to our gluten-free diets. Stuffing, pie crust,...yikes! And if we're also trying to be sugar-free and dairy-free, the entire meal is full of land-mines.
Here are nine tips you can use to get through the meal without compromising your

Fall is in the Air and Squash is at the Markets!
I'm always a little sad to see summer end. But then I start to think about all the great fall experiences, like watching the leaves change color and blow about in the wind, pulling out cozy sweaters for the first cool weather, and warm, hearty fall cooking.
Squash is at the Farmers Market
I love the autumn squashes which are starting to turn up at our local markets about now. These are

Healthy ribs...really??
There's no doubt about it. Ribs are an all-American favorite. However, if you're healing with foods, you may have given up sugar and pork, which means that ribs--tasty, succulent and slathered in a sweet and spicy sauce-- may be a food you're wishing you could still eat.
Of course, we're not advocating that anyone eat ribs frequently. A few times a year is probably as often as anyone needs

5 Benefits of Rosemary (and 75% Memory improvement from a Sniff is just one!)
Rosemary has many health benefits
Rosemary is an herb that has been a mainstay of cooking and healing for centuries. A fragrant evergreen herb native to the Mediterranean, it is used as a culinary condiment, to make bodily perfumes, and for its potential health benefits.
The herb not only tastes good in culinary dishes such as rosemary chicken and lamb, but it is also a good source of iron,

Organic Chile Verde... Done Right!
If you grow up on a cattle ranch in California you get a taste for Real Mexican home cooked food. I have a lot of favorites... but this one is by far one of the best.
Organic Pork Chili Verde
Start with Heritage Pasture raised pork. It just tastes better. If you don't have your own pig handy then get it at your local farmers market or Trader Joes. I like to use picknick shoulder but
